Hi SherpaPhil,
I have used several breeds of animals with 16mm scale all manufactured by Schleich and available from various sources on-line. One I use is Wonderland Models who have an extensive picture library for you to select from They are not all made to the same scale so you need to select carefully, however, the quality for the price is good.

I am sure that you should be able to find something in the Toy shops. They usually have packs with farm animals in different scales if you search well. I cant remember where i saw it but someone had made cattle wagons with these toy versions.

I'm afraid '0'gauge figures are too small ~ the average person comes out at around 90mm tall for 16mm scale, so use that as your guide.
I used to carry a cardboard cut-out figure around with me in my wallet (no need now, I've developed more of an "eye" over time and if all else fails, whip out a credit card ~ they're about 90mm across!) and use that against anything you spot which might be useful.
The "Early Learning Centre" usually turns up a selection of animal (people sometimes too) and the Scleich range is terrific.
Always drop in to the charity shops and have a quick look in the kiddies section and when they're "in season" take a stroll around the local car boot sales.
If you get a trip to the coast, look for the tackiest souvenier shops you can find ~ you might be pleasantly suprised to find some "familiar faces" on the shelves.

Hope that helps and good hunting.
