Now I was told that I can run my meths burner with no bung in it for quick refills which has been going fine until this afternoon when the meths tank caught fire a few times whilst running. The meths was 'boiling' and then igniting
Any advice welcome

If its not made to run on rails I'm not bothered
Sounds like you've got your wicks a bit high, too large a flame will get blown around the loco more and will heat up the burner as well as the boiler. Once a meths tank catches fire its more likely to do it again, so its best to let it cool for a short time.
